Healthy Vegan Fridays

Happy Healthy Vegan Friday! My co-host Kimmy and I are hoping that there will be more Halloween-themed recipes in the next couple of weeks for us to try out. Kimmy has also lined up a giveaway for you for next week, so make sure to come back!

I didn’t post a recipe this week since I cooked exactly zero things. ZERO. No joke. We stayed in an air bnb in Brooklyn that was so tiny that I would have basically been making dinner in the bathroom. But look how cute it was!

I had some of the most amazing food while I was in NYC, that I couldn’t have made anything better myself. I was hoping to do a blog post of all the yummy places I ate, but that will have to come later.

I also got another vegan tattoo while I was there! If you are looking for an awesome vegan tattoo artist who will chat with you to keep your mind off the pain, I highly recommend Mike Attack!

Here are the recipes that everyone voted for last week!

One recipe was a kale chia smoothie recipe, but I hate chia seeds so I’m calling it a misvote, haha. Yes, I did say that I am a chia seed hater (I can see people unfollowing my blog as they read this). I don’t dislike them for their taste, because I don’t really think they taste like much. I hate them for their gross slimy consistency and their ability to get stuck in my teeth so good that swishing, rinsing, and even sometimes vigorous brushing cannot dislodge them to save a life. However, last weekend, I sent Isabelle into Jamba Juice to order the Great Greens juice for me that I always get, but I forgot to tell her to omit the chia. I forgot until I had already drank the entire thing!!! Apparently, you can’t even tell that chia is in something when it’s all blended up!

Another favorite recipe last week was a fig almond custard pie from Chitra’s Healthy Kitchen. Figs are so good for you. I have a wild fig tree growing in the empty lot by my house. It was so prolific for a few weeks and now it’s bone dry like an Ansel Adams print. I wonder if figs are still in season where Chitra lives.

There was a Mexican Quinoa Salad from Vegans Eat Yummy Food Too, which made me wonder if I’m the only one who doesn’t know what capsicum is. If I had been making this recipe, I might have omitted the ingredient entirely out of ignorance, and it could have made it taste less delicious! Regardless, the post was cute, if just for the lunch box dishes (which I want, whether they’re “not for adults” or not). Although, I would need 354859 of them because I’m a huge piggie.

My favorite recipe was the Cali-Coco BLT Quinoa Salad from The Taste Space.

Coconut bacon must be the new kale chips. Seriously, everyone and their mom is talking about this stuff. I prefer my adzuki bacon, but coconut bacon is probably easier to make/buy.

I’m sharing my pumpkin cheesecake recipe after making them again and again to get the recipe perfect. I brought pumpkin cheesecakes to work on National Pumpkin Cheesecake day. They were trying on their halloween costumes, so that’s why they look like bears. Here’s the recipe for these adorable pumpkin cheesecake bears.

Before we see what healthy vegan recipes you all have, I wonder how many of you attended the Vegan Beer & Food Fest last weekend in SF. I really need to only go to these events with a minimum of 7 friends (who like to share) from now on. Because, when I don’t, I never get to taste all the things I want to try. So, if you’d like to sign up to be one of those 7 people, please let me know. I’m currently taking friend applications.

The San Francisco veg festhad these chocolate covered caramel lollipop from OCD, a local vegan candy maker. Yes, you heard me correctly!
