Dice veggies for the stuffing.
Make gluten-free stuffing.
Squeeze the liquid out of the tofu, add the spices, and mix.
Line a loaf pan with cheesecloth, press tofu into the mold, and fill with stuffing.
Top with the rest of the tofu, add marinade, and bake.
Remove from pan, baste again, and return to the oven to bake more.
Repeat basting and baking until it's done.
Slice and serve.
