Happy Day Off of Work!!! What better way to celebrate sleeping in on a Friday, than co-hosting Healthy Vegan Fridays with the fabulous Kimmy.

Last week was especially rough for me. In addition to my dentist informing me that I grind or clench (I’m not sure which is worse) my teeth in my sleep, I also spent every free moment of my life packing. I almost lit all of my belongings on fire so I wouldn’t have to pack another item. If it weren’t for someone calling about my ad on Craigslist selling a blendtec, I might have hid under the covers for the entire week. But thankfully, the thought of getting $280 in cash got my lazy ass out of bed, and I managed to make myself a salad to give me the energy to continue packing.
That salad, however, was the last healthy thing I ate. With everything I own in boxes, I think I ate takeout for almost every meal after that. Don’t get me wrong…I love me some Veggie Grill, but I was actually getting tired of it (Who the hell am I???). I was so excited to finally unpack enough kitchen items to cook dinner. And dessert. I may or may not have made dessert first.
All of the recipes submitted to Healthy Vegan Fridays last week looked amazing! The three recipes that the internet loved the most are the following.

How is she so perfectly amazing? I love everything she makes!!! How did she find the time to make such adorable treats? (Maybe she wasn’t moving to a new house this week.)
For my last week’s HVF recipe, I made this Artichoke Pâté in an effort to procrastinate my packing, as well as use up some navy beans that I had in my freezer (that’s one less thing to pack, woohoo!).
The first thing I made in my new kitchen was a Nutella pie. As far as desserts go, I consider it healthy since the hazelnut butter and the tofu added a lot of protein, the sweetener I used was coconut sugar and agave, and all the ingredients were organic. Last night, I made tuna casserole that was sooooo delicious!!! Tonight, I made chicken pesto sandwiches, which were also delicious, but none of this was cute enough to be blogworthy, so I’ll instead show you a picture of my Nutella pie (which I luckily shared with David, Zen, Isabelle, Ashley, and Matt or I would have eaten the entire thing myself!)
