About a week ago, I was reading my friend Kimmy’s blog when I learned that the 2 girlies that she was co-hosting Healthy Vegan Fridays with had stepped down and that she didn’t have a replacement for them. I immediately sent her my resume, application, and references in hopes of being chosen for the role. Due to my well-matched qualifications (and the fact that I had zero competition), I was selected to co-host Healthy Vegan Fridays with her! I’ve been super excited all week getting ready for my debut blog posting by designing a new logo, making a badge for other bloggers to share on their sites, and almost murdering my boyfriend while he tried to teach me how to add a new page to my website. In addition to the prospect of being forced to eat healthier, I’m even more excited about having more excuses to hang out with Kimmy!

winner #1: Banana Muffins from Sandi’s Allergy Free Recipes

These remind me of when I first went vegan and there was hardly anything on the internet, so the only egg replacer I knew about was banana. I think everyone knows where this story is going, but yeah, it’s a good thing I like the taste of banana.

winner #2: Chocolate PB Protein Pudding from Super Strength Health

I’m not sure that my mouth would be fooled by my taking my breakfast shake and converting into a dessert, but for a healthy dessert option, this is extremely creative. It would be a great cheater dessert if you’re doing a cleanse.

Aren’t these adorbs??? I am a believer in fate, kismet, whatever you want to call it, and I REALLY think it was fate that brought these Munchkins into my very first Healthy Vegan Friday blog post! Why you ask? (I’m sure nobody asked, but you’re going to find out anyway because I cannot hold in my excitement right now.) I was at the Albany flea market last weekend, and because I have that disorder/gift/illness where every time there’s something purple within a 5 mile radius, my purplicious radar goes off, I noticed something out of the corner of my eye, and was magnetically drawn towards it (I had no control over the situation really). It ended up being a cakepop maker, which normally wouldn’t have interested me (except for the exterior color of course), due to a very long and drawn out bad experience making cake pops the first, last, and only time I ever made them. However, upon seeing Budapest Hotel, I, of course, wanted to make the treats from the movie, and was trying to figure out how to make the pastry sphere at the top of them. So, I paid $2 for the cakepop maker, brought it home, and scrubbed it so hard, you would think I had dug it out of a dumpster with a skull & crossbones and hazardous waste symbols on the side. I assumed that after making these famous treats, I would then pass along my cakepop maker to some lucky craiglist reader, but now I have yet another exciting adventure for my cakepop maker to experience before it gets adopted by a new family.

My favorite recipe from the Healthy Vegan Fridays entries last week was the one pot pasta by Yep, it’s vegan. She is seriously brilliant! I have a dishwasher, but that doesn’t mean I want to run it multiple times/day. The clear solution is to use fewer dishes! I cannot wait to try this once I’m all moved into my new dollhouse and have time to cook again.

This week, I’m going to be submitting an old recipe I created a year ago when I used to blog at It’s called Meatloaf Cupcakes. Don’t be afraid of the name. They taste better than they sound.

Now, I believe that this snippet of code I’m about to insert here is being referred to as a linky. It sounds kind of like the name of a pacman ghost or a game on that game show The Price is Right. Nonetheless, I hope that some of you cute vegans out there on the internet have some healthy recipes to share this week.
