This has been an especially rough week for me. In addition to my dentist informing me that I grind or clench (I’m not sure which is worse) my teeth in my sleep, I’m also in packing hell! Every free moment of my life is spent packing, and I think my body is trying to protest, because today when I got home from work, I lied in bed and fell asleep (before 6pm!). I NEVER take naps. Like ever. But, I think my body is just shutting down at the thought of packing another box. It would rather burn all of my belongings in a raging fire than pack another item. If it weren’t for someone calling about my ad on Craigslist selling a blendtec, I might still be sleeping right now. But thankfully, the thought of getting $280 in cash got my lazy ass out of bed, and I managed to make myself a salad to give me the energy to continue packing.

All of the recipes submitted to Healthy Vegan Fridays last week looked amazing! The three recipes that the internet loved the most are the following.

winner #1: Pizza Waffle Bites from Detached & Connected

I’m loving Detached & Connected in the 2 weeks that I’ve known of her existence! Her pictures are stunning, her recipe ideas are unique and mouth-watering, and her sense of humor is witty. I basically want her to come and live with me and cook for me daily (unless that’s creepy, in which case, just kiddinggggg).

winner #2: Vegan Choplets from Delicioso

I am super excited to try making these! My ex-boyfriend had taught me how to make chicken nuggets with vital wheat gluten, and I found it nearly impossible to work with. Somehow Delicioso makes it look easier. I hope I’m right about that because I really want to make my own mock meat so I can avoid the unwanted ingredients in the ones I buy from the store.

winner #3: A TIE between Raw Mango Ginger Energy Balls from The Taste Space and Avocado & Fish Toast from House Vegan

I haven’t seen (or tried) this toona from Sophie’s Kitchen yet, but I’m excited to try it out. Those of you who know me, know that I have searched high and low for a tuna that’s not too tuna-ey, because I’m weird about stuff that tastes too much like the real thing. The only tuna I’ve been able to find that I actually like is the Layona tuna chunk. Given that I’m a pretty big fan of the Sophie’s Kitchen Fish Fillets, I have pretty high hopes that I’m going to like the toona as well.

For my HVF recipe, I had to use one I posted last week, because this week my kitchen only contains like 3 unpacked dishes. I made this Artichoke Pâté in an effort to procrastinate my packing, as well as use up some navy beans that I had in my freezer (because that’s one less thing to pack, woohoo!)
