Happy Healthy Vegan Friday! My co-host Kimmy is quite proud that we are in week 17 of this, since both of us are almost too busy for blogging these days. We love having people share their vegan recipes sooooo much, that even though I’m super crazy tired from my ultra-intense week in NYC, I’m postponing sleep to make sure this is up and ready for this Healthy Vegan Friday.

winner #1: Zucchini Chickpea Fritters from Yes! I’m Vegan
I made some fritters recently that were quite similar to these. I never posted them because I’ve been a bit behind on blogging, but mine were heart shaped. They’re really easy to make and yummy so make them all the time!
winner #2: Tomato Basil Cauliflower Rice from Strength & Sunshine
This only requires a small amount of tomato paste, so it could be a great thing to make mid-winter when there are no fresh tomatoes to be found.
winner #3: Just Peachy! smoothie from Urban Naturale
Peaches are a perfect smoothie fruit, because when you’re drinking them, you’d never guess that they once felt like they were wearing an itchy sweater. The thought of biting into a peach is much less desirable than biting into a nice smooth nectarine.
This week, I will not be submitting a recipe since I cooked exactly zero things this week. ZERO. No joke. We stayed in an air bnb that was so tiny that I would have basically been making dinner in the bathroom. But look how cute it was!
And honestly, I had some of the most amazing food while I was there, that I couldn’t have made anything better myself. I was hoping to do a blog post of all the yummy places I ate, but that will have to come later. I did list some of the many places on my instagram.
