Easy Biscoff Sauce

This Biscoff Sauce recipe takes less than 5 minutes and only 2 ingredients to make. It can replace store-bought Biscoff or Speculoos cookie butter, go on top of Biscoff Cake, or be drizzled over ice cream. And it’s plant based and vegan!
This recipe makes 1 cup of biscoff sauce.

I went to the Vegan Street Faire and one of the highlights was a vegan, gluten-free biscoff cake made by Green Flour Bakery. It was so good that I had to come home and spend the rest of my weekend making biscoff cake with this biscoff drizzle.
I personally contacted both the brand that makes Lotus Biscoff cookies, as well as Trader Joe’s, who sells Speculoos cookies. Both companies have confirmed that the sugar in their cookies is processed in a vegan way.
Ingredients you need for Biscoff Sauce

- 16 biscoff or speculoos cookies
- ⅓ cup vegan coffee creamer
How to Make Biscoff Sauce
prep time: 3 min
Process 16 cookies into crumbs in a food processor, fitted with the S blade. If you don’t have a food processor, you can use a blender, but it’s easier and faster with a food processor.
Pour vegan coffee creamer through the hole in the food processor lid while it’s running. I used ⅓ cup for the sauce pictured in this recipe. If you want it to be thicker, use ¼ cup. If you want it to be thinner, use ½ cup.
Stop the food processor and scrape the sides with a silicone spatula and process again.
Repeat until the biscoff sauce is smooth.
Drizzle over biscoff cake, on top of ice cream, or store in the fridge for up to a week.

Can I just use store-bought biscoff sauce?
Yes, Lotus brand Biscoff Sauce is vegan if you want to buy it instead of making your own.
What can I do with this biscoff sauce?
This biscoff sauce tastes great on pancakes, waffles, ice cream, cake, muffins, and brownies. You can even make hot cocoa with it.
I used it a drip on this Christmas drip cake.
Oh, and as Briana pointed out, you can also eat it by the spoonful. She says you’re welcome for that tip.
Ingredient Substitutions
- Cookies: Lotus sells Biscoff Crumbles in a bag, but it’s so easy to make your own in a food processor, that I just make my own. If you’re a strict vegan, you may want to double check with the company who makes the cookies you plan to use. I emailed Lotus and Trader Joe’s and both have confirmed that the Lotus biscoff cookies and the Trader Joe’s Speculoos cookies contain vegan sugar.
- Vegan Creamer: You can use any kind of plant-based creamer in this biscoff sauce recipe. You can even use vegan milk in a pinch, but you might not need as much since nondairy milk is thinner than nondairy creamer. I used silk almond creamer in this recipe because that’s what I had in my fridge. If you use a soy-based creamer or milk, I recommend buying organic or non-GMO.
