Vegan Instant Pot Steel Cut Oats: Two Ways

I’ve always seen people making steel cut oats and it takes soooo long that I just lost interest. No bowl of oatmeal is worth all that effort, thank you very much. But then 2 things happened.
- I got an instant pot
- I found a GIANT bag of organic steel cut oats at costco for hella cheap
Steel cut oats (also known as irish oats) are healthier than old fashioned rolled oats (less processed, higher in fiber, lower on the glycemic index, etc). I’m all about healthier as long as I’m not sacrificing taste, so as soon as I found the loophole to standing over a pot of oatmeal, stirring it for 45 minutes, I was on board!

This recipe makes 4 servings of oatmeal.
Mandatory Oatmeal Ingredients
- 1 cup steel cut oats
- 3 cups liquid
For the liquid, I’ve used all water, all nondairy milk, all juice, and a combination of those things together. I’ve even added vegan eggnog to the mix. You honestly cannot fuck this up, as long as you stick to the 1:3 ratio of steel cut oats to liquid.
Optional Oatmeal Ingredients
I’ve added all or any of the following ingredients to the instant pot before cooking the oatmeal. I’ve also cooked just the oats and liquid and then added some of these optional ingredients later (so that I can share some of the plain, unflavored oatmeal with my doggo of course).
- 1 diced apple (this is a great way to use up old apples that are no longer crisp)
- ½ cup raisins
- ¼ cup sucanat or maple syrup
- 2 tablespoons molasses
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ⅓ cup vegan chocolate chips
Overnight Oatmeal Directions
This set of instructions is for those of you who can plan ahead, but also for those of you who have negative time in the mornings before you have to run out of the house. This way, it’s ready the second you wake up.
Combine all ingredients in the instant pot and stir. I like to add all my optional ingredients when I make it overnight because it saves time in the morning if it’s ready to eat when I take the lid off.
Lock the lid in place.
Set instant pot to slow cook and choose 6 hours.
Press the keep warm button if it’s not already on.
Half Hour Same-day Oatmeal Directions
These instructions are for those of you who didn’t plan ahead and start your oats the night before. It’s also for weekends or days where you don’t have to rush out the door in the morning.
Combine ingredients in the instant pot and stir.
Lock the lid in place.
Press the pressure cook button (make sure it’s on high) and set it for 3 minutes.
Release the instant pot pressure naturally.
Add any extra toppings after you serve it.
